Salsa Asada
Something that should never be missing in mexican food is Salsa. Mexican kitchen is well known for being spicy and since we have a lot of different chillies, wen can make a lot of different salsas. Here is a typical one called salsa asada which means grilled salsa. This is a general use salsa that can be added to any kind of taco. LIST OF INGREDIENTS:

- 4 Tomatos - 1/2 White onion - 1 Bunch of coriander - 2 Garlic cloves - 3 Serrano Chilies (to taste) - Salt and Pepper (to taste) 1. Peal the onion and the garlic cloves. Make some fine cuts to the tomatoes. Alternatively you can cut them in two or four pieces.
2. Put the onion, garlic, tomatoes and chilies in a flat pan or a griddle and start to grill them on medium fire.

3. Cook until all of the ingredients are well grilled and the tomates are soft.

4. Mix all the grilled ingredients in the blender together with the coriander and salt & pepper to taste. CAUTION: do it slowly and in low revolutions, we don't want to end up with a smoothing. Alternatively you can use a Molcajete (mortar).
