Chicken Alambre Tacos with cheese

Alambre is a classic of Mexican food. The mixture of all the ingredients makes it an unparalleled taste experience when eating a taco. There are many alternatives for this dish that go from the Tex-Mex style to the Mayan alambre but here it is my recipe. LIST OF INGREDIENTS:

- Two chicken breasts - Red, green or yellow pepper (to taste) - Onion - Serrano peppers (to taste) - Grated Gouda cheese (preferably young) - Corn tortillas - Oil (can be corn or olive, on taste) - Salt and pepper - Green or red sauce (to taste) INSTRUCTIONS: 1. Cut the pepper, onion and chicken breasts into small squares.

2. Add oil to a frying pan at medium-high heat. When hot, place the onion and cook for one minute until they get golden brown. 3. Add the pepper and the chicken to the pan and stir the mixture while you let it cook until the chicken is well done. Season with salt and pepper to taste. OPTIONAL: If you like it hot, you can slice the chilies and add them to the pan. I recommend you to do this at the end so that the air does not get spicy. 4. When your Alambre is almost cooked, add the grated Gouda cheese on top of it and cover the pan for two minutes so that the cheese melts. 5. Heat the tortillas on a griddle or pan and serve your Alambre in tacos. OPTIONAL: You can add a hot sauce, in this case, I added green sauce.
